Ingredients:

For the Balsamic Berry Glaze:


1 cup mixed berries (such as strawberries, blueberries, and raspberries)

2 tablespoons balsamic vinegar

1 tablespoon honey or maple syrup

1 tablespoon olive oil

Salt and pepper, to taste

For the Chicken:


4 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

For the Tomato and Spinach:

2 tablespoons olive oil

2 cloves garlic, minced

2 cups cherry tomatoes, halved

4 cups fresh spinach leaves

Salt and pepper, to taste

Instructions:


Prepare the Balsamic Berry Glaze:


In a small saucepan, combine the mixed berries, balsamic vinegar, honey or maple syrup, olive oil, salt, and pepper.

Bring the mixture to a simmer over medium heat, then reduce the heat to low.

Let it cook for about 5-7 minutes, stirring occasionally, until the berries break down and the mixture thickens slightly.

Remove from heat and set aside.


Cook the Chicken:

Season the chicken breasts with salt and pepper on both sides.

In a large skillet, heat olive oil over medium-high heat.


Add the chicken breasts to the skillet and cook for about 5-6 minutes on each side, or until they are cooked through and golden brown.


Once cooked, remove the chicken from the skillet and set aside.

Prepare the Tomato and Spinach:


In the same skillet used for the chicken, add olive oil over medium heat.

Add minced garlic to the skillet and sauté for about 1 minute until fragrant.

Add the cherry tomatoes to the skillet and cook for 2-3 minutes until they start to soften.

Stir in the fresh spinach leaves and cook for another 2-3 minutes until the spinach wilts.

Season with salt and pepper to taste.


Assemble the Dish:

Place the cooked chicken breasts back into the skillet with the tomato and spinach mixture.

Spoon the balsamic berry glaze over the chicken breasts, ensuring they are well coated.

Let everything simmer together for another 2-3 minutes, allowing the flavors to meld.

Serve:


Transfer the chicken breasts with the tomato and spinach mixture to serving plates.

Spoon any remaining balsamic berry glaze from the skillet over the chicken.
