Stuffed Bell Peppers with Quinoa, Berries, Nuts, and Greens

This recipe brings together the vibrant flavors of the ingredients in a hearty and satisfying dish.


Ingredients:


4 large bell peppers (any color), halved and seeds removed

1 cup quinoa, rinsed

2 cups vegetable broth or water

1 tablespoon olive oil

1 onion, diced

2 cloves garlic, minced

1 cup mixed leafy greens (such as spinach, kale, and Swiss chard), chopped

1/2 cup mixed berries (such as strawberries, blueberries, and raspberries), diced

1/4 cup mixed nuts (such as almonds, walnuts, and pecans), chopped

1/4 cup cherry tomatoes, diced

Salt and pepper, to taste

1/4 cup grated Parmesan cheese (optional, for topping)

Fresh parsley or basil, chopped (for garnish)

Instructions:


Preheat your oven to 375°F (190°C).


In a medium saucepan, bring the vegetable broth or water to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed. Remove from heat and let it cool slightly.


While the quinoa is cooking, heat olive oil in a skillet over medium heat. Add diced onion and cook until translucent, about 5 minutes. Add minced garlic and cook for another 1-2 minutes until fragrant.


Stir in the chopped mixed leafy greens and cook until wilted, about 2-3 minutes.


In a large mixing bowl, combine the cooked quinoa, cooked greens mixture, diced mixed berries, chopped nuts, and diced cherry tomatoes. Season with salt and pepper to taste. Mix well to combine.


Arrange the halved bell peppers in a baking dish, cut side up. Spoon the quinoa mixture evenly into each pepper half, pressing down gently to pack the filling.


Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.


If using, sprinkle grated Parmesan cheese over the stuffed peppers during the last 5 minutes of baking for added flavor.


Once the stuffed peppers are cooked through, remove them from the oven and let them cool slightly before serving.


Garnish the stuffed peppers with chopped fresh parsley or basil before serving.
