Turmeric-Glazed Salmon


Flavorful and nutritious Turmeric-Glazed Salmon with Berry Salsa and Sautéed Greens:










Ingredients:


For the Turmeric-Glazed Salmon:


4 salmon fillets (about 6 ounces each), skin-on or skinless

2 tablespoons olive oil

1 teaspoon ground turmeric

Salt and pepper, to taste

For the Berry Salsa:


1 cup mixed berries (such as strawberries, blueberries, and raspberries), diced

1/4 cup cherry tomatoes, diced

1/4 cup mixed nuts (such as almonds, walnuts, and pecans), chopped

2 tablespoons fresh cilantro, chopped

1 tablespoon extra-virgin olive oil

1 tablespoon balsamic vinegar

Salt and pepper, to taste


For the Sautéed Greens: (such as spinach, kale, and Swiss chard), washed and chopped

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper, to taste

Instructions:


Preheat your oven to 400°F (200°C).


In a small bowl, mix together olive oil, ground turmeric, salt, and pepper. Rub the turmeric mixture evenly over the salmon fillets.


Place the salmon fillets on a baking sheet lined with parchment paper. Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.


While the salmon is baking, prepare the berry salsa. In a mixing bowl, combine the diced mixed berries, cherry tomatoes, chopped nuts, fresh cilantro, extra virgin olive oil, balsamic vinegar, salt, and pepper. Toss gently to combine. Set aside.


In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.


Add the mixed leafy greens to the skillet and cook, stirring occasionally, until wilted, about 3-5 minutes. Season with salt and pepper to taste.


Once the salmon is done baking, remove it from the oven and let it rest for a few minutes.


Serve the Turmeric-Glazed Salmon with a generous spoonful of berry salsa on top and a side of sautéed greens.
